According to the digestibility cow butter is situated on the first place among the animal origin fats. Butter is one of the most common dairy products on the consumer market.cotelea Currently, unfortunately, in the pursuit of profit, manufacturers make deviations from the norms of quality and safety and deceive their customers, by replacing natural products with cheap ingredients, to the detriment of people's health. The purpose of the paper is the investigation of the naturalness of cow butter marketed on the consumer market of the Republic of Moldova. As objects of the study were served 10 types of butter. The indices that authenticate the naturalness of the butter were determined by standardized and non-standardized methods. Our results show that none of the ten samples analyzed are natural butter. All samples contain both animal and vegetable fats, which are foreign to butter. JEL: Q02
